Eating apples give a sweet note to this root vegetable soup, topped with crisp pieces of bacon and creme fraiche.


500g / 1lb 2oz (roughly 3) eating apples
50g / 1 and 3/4oz butter
1 tbsp sunflower oil
2 onions, chopped
1 celeriac (roughly 750g/1lb 10oz), cut into roughly 2cm / 3/4in chunks
1 large carrot (roughly 120g / 4 and 1/2 oz), cut into roughly 1.5cm / 1/2in slices
2 garlic cloves, crushed
2 medium potatoes (roughly 250g/9oz), peeled and cut into roughly 2cm / 1/2in chunks
1 small bunch fresh thyme (3-4 sprigs)
1 bay leaf
1.3 litres / 2 and 1/4 pints vegetable or chicken stock, made with 1 stock cube
flaked sea salt and freshly ground black pepper

Using frozen artichokes in this Italian-style chicken dish makes assembling the casserole recipe convenient because the inedible parts of the vegetable are removed.


1 1/2 pounds meaty chicken pieces (breasts, thighs, and drumsticks), skinned

1/4 teaspoon salt

1/8 teaspoon pepper

1/2 cup dried tomatoes (not oil-packed)

2 cups sliced fresh mushrooms

1 large leek, thinly sliced, or 1/3 cup chopped onion

2 cloves garlic, minced

1/2 teaspoon dried rosemary, crushed, or 2 teaspoons snipped fresh rosemary

2 tablespoons olive oil

3/4 cup chicken broth

1 teaspoon finely shredded lemon peel

3 tablespoons lemon juice

1 8 ounce package frozen artichoke hearts

OK, so as you may know, I have a fascination with putting eyeballs on most of the foods I make for my oldest son. I made Octo-Dogs before and they were a HUGE hit. I wanted to try it with his pasta and meatballs also. It's very simple and too cute!

Cooked meatballs-(our birds)
Candy eyes from craft stores or baking supply stores
1 Carrot or orange peel (our bird's beak)
Sharp pointy knife
